The article considers rheological properties of modified starch depending on the concentration of starch and modifiers. It was revealed that the degree of binding of the modified starch dye decreases by almost 1.6 times compared to native starch.
It was determined that the stability of modified starch up to 4 days, against starch up to 1.5 days.
